Eco's Cafe, Merrimack, NH – Since I returned to Hollis for my extended, temporary visit, I discovered this cafe, Eco's, in Merrimack. It's a great spot for something homemade where the chef takes your health into consideration when choosing the ingredients. Today, I had the Spinach, feta, black olive, tomato, & garlic pizza which included a small garden salad, all for less than $6.00. And it was good.
